Classic Risotto with Sautéed Mushrooms and Basil Pesto

Risotto created the old-school way. Caramelize onions in olive oil, add the risotto and toast slightly, deglaze with white wine, slowly add stock. Boom. Finally, the basil pesto and sautéed mushrooms are added.

Cremini Mushrooms – Cremini mushrooms (aka young portobello mushrooms) are rich with micronutrients such as antioxidants and potassium, and are high in fiber, too. Not only do these little fungi add a ton of flavor but they are a great way to promote everyday health.

Arborio Rice – Arborio is an Italian short-grain rice, best-known for its use in risotto. Its high starch content and chewy texture are responsible for the creaminess that risotto fans adore.

Basil – Basil’s sweet and savory notes perfectly compliment the deep, earthy flavors from the mushrooms.

FAQs

What if my Risotto isn't rehydrated?
Give it a little bit longer. Rehydration isn't an exact science, and factors such as altitude and ambient temperature can have an effect. Be sure to stir this meal well, as the thicker consistency of this dish requires a few extra stirs to incorporate all the ingredients.

Are there a lot of mushrooms?
Short answer: yes. It’s loaded with sautéed cremini mushrooms and the arborio rice is cooked in mushroom stock. If you're not a fan of mushrooms, you may want to choose a different meal.
